Cheng Li is a PhD Candidate at Rutgers University in New Jersey. She has worked on various research projects with limited-resource population for Supplemental Nutrition Assistant Program - Education (SNAP-Ed) and the Expanded Food and Nutrition Education Program (EFNEP) for the past 4 years. In her current role, she works with Dr. Debra Palmer-Keenan on the multi-state EFNEP research group NC2169, to lead the effort of developing and testing physical activity questions for the food and physical activity questionnaire for adults. She has also assisted with the cognitive interviews and test-retest reliability for this questionnaire in nutrition, food safety, food resource management, and food security. She received her B.S. from Southern Medical University in Clinical Sciences and M.S. from University of Kansas Medical Center in Dietetics and Nutrition. She is an active member of the Society for Nutrition Education Behavior and the American Society of Nutrition.
